Gluten-Free Kosher Crock Pot Meatloaf!

It’s hard being a busy working mommy, especially when you’re working from home and have cute and sweet little tornadoes running around wreaking havoc (thank G-d for my mother-in-law!)  Getting dinner on the table especially when it has to be gluten-free – no wraps or sandwiches for us – is not the easiest thing in the world. 

But thank G-d, cholent isn’t the only thing you can make in a crock pot.  I never even thought you could make meatloaf in a crock pot, and I definitely didn’t think you could make it without using some sort of breadcrumbs, gluten-free breadcrumbs or otherwise. 

So I was really happy to discover about a million and fifty recipes for crock pot meatloaf – but of course, most of them either gluten and/or dairy.  Obviously, that wasn’t going to work for us.  Also, for some reason people like to put Worcestershire sauce in their crock pot meatloaf.  That obviously does not work for us, being G-d fearing Jewish types who don’t mix meat with fish, either. 

I had difficulty finding ANY recipe that fit the needs of the gluten free kosher consumer.  So, I did what any good Jewish mother worth her salt should do:  I asked my mother-in-law to help substitute proper ingredients for what we needed to do in order to make some kosher meatloaf in a crock pot.

Ingredients
  1. 2 pounds of ground beef, chicken or turkey (or a combination) - you can throw some sausage in as well.
  2. Olive oil
  3. 1 medium onion
  4. 1 or 3 fresh garlic cloves
  5. whatever spices you like (we use salt, pepper, cumin)
  6. duck sauce - gives it a nice kick
  7. 2 eggs (beat 'em up)
Instructions
  1. Cut up the onion and garlic in whatever shape you desire.
  2. Fry 'em up before you mix everything else up
  3. Mix up everything (make sure the onion and garlic aren't too hot before you do this)
  4. If you have a metal loaf pan that fits in your crock pot go ahead and use it. If not, just put the meat glop directly in the crock pot.
  5. Cover and cook on high for 2-4 hours depending on how hot your crock pot gets.
  6. Let the meatloaf cool down for 15-30 minutes with lid off before cutting.
Notes
  1. We substituted duck sauce for the Worcestershire sauce but honestly, it's really up to you. Some valid substitutions are fruit jelly of any type, barbecue sauce, or Tamari soy sauce. Get creative about it and enjoy!
